Lemon Cake with Poppy Seeds

200g melted butter
5 eggs
210g sugar
The zest of 1 lemon
180g flour
120ml lemon juice
70g almond powder
1 tbsp.baking soda
25g poppy seeds
Icing sugar


Preheat the oven to 170 °C. Melt the butter and mix it with the powdered sugar before adding the flour, almond powder and baking soda. Mix. Add the eggs one by one, mixing between each addition. Add the lemon juice and zest to the mixture, before stirring in the poppy seeds.

Pour the mixture into a buttered and floured mold. Bake for 40 minutes. Check the cake periodically by sliding the blade of a knife into the center of the cake, until it comes out dry. If not, continue to cook for another 5 minutes before rechecking again.Decorate with icing sugar and serve!
