Les Deux Amies is a London based Crepe company with stores in both Shoreditch and Croydon. They do build-your-own crepes or you can choose from one of their carefully crafted recipes. Savoury or sweet, they've got it all.

LES DEUX AMIES...



IS ABOVE ALL A STORY OF FRIENDSHIP...
Caroline and Adeline came to London from France, with a dream of creating speciality French food using locally sourced ingredients from Britain and the French savoir-faire. The idea of opening a crepe bar was a shared idea that came to them whilst having a chat over a glass of wine (most of the best ideas are fuelled by wine!).

WE LOVE LES DEUX AMIES...
because we can't resist an anglo-francais success story. Hardwork and commitment to their dream have seen Caroline and Adeline move from their food truck and catering events in 2014, to opening their second store this summer.

MAKE YOUR OWN...
if you can't make it down to one of their stores, fret not! Caroline and Adeline have been kind enough to share 2 of their favorite recipes with us that you can whip up in your own kitchen.

The Frenchy > Ham, Cheese, Egg



INGREDIENTS                                    
(Serves 6)

Batter

- 500g buckwheat flour
- 10g of salt
- 1L Water


Filling

- 6 slices Ham
- 240g Cheese
- 6 Eggs


Method

1. Put the buckwheat flour and salt into the bowl and stir to combine.
2. Pour a third of the water into the bowl and start mixing with your hands.
3. Slowly add the rest of the water, whisking carefully with a spatula to combine the ingredients.
4. At the beginning the batter will be sticky but the final result should be very smooth and non-lumpy.
5. Heat a pan over a medium heat. With a paper towel, rub little oil in the pan then pour a ladle of the batter and swirl until it covers the base of the pan.
6. Let the galette brown on one side, then flip it over.
7. Remove the galette from the pan and set it aside.



Sweet > Chocolate with berries



INGREDIENTS                                     

(serves 4 to 6)

The batter
- 100g White flour
- 25g Sugar
- 20g Bitter cacao
- 25cl Milk
- 3 Eggs
- 50g Butter melted
- Pinch of salt


Filling
- 600g Strawberries
- 400g Blueberries
- 50g Sugar



Method
1. In mixing bowl add the flour, sugar, cacao and salt. stir to combine.
2. Make a well in the centre and crack the eggs into it. Add 1/3 of the milk.
3. Start mixing until obtaining an homogeneous thick batter.
4. Gradually incorporate the rest of the milk until the mixture is smooth and bubbles form on the top.
5. Pour a ladle of the batter into the pan until it covers the base.
6. Mix in the melted butter
7. Cook for 40-50 seconds flip it and wait another 30 seconds.
